This morning I think we should start the day with a summer smoothie and healthy muffin. add a little flax for some more omega-3's and your off with your brain food and a little pep in your step.
There are three ways to get flax into your diet, seeds, meal and oil but today we are using the meal because I currently don't have the others in my pantry. Now if you have a blueberry bush outside your back door, you can't get any fresher and I would use those, but I only have the ones I bought at the farmer's market and froze last season. That is alright it makes for a great smoothie. Let's get to it.

Energy Muffins
Ingredients
2.5 oz. Peanut or Sunflower seed oil 3 oz. Golden Raisins
2.7 oz. Whole wheat flour 5.8 oz. Bran flakes
0.6 oz. Oats 8 oz. Milk
1.2 oz. Wheat Germ 2 eggs, beaten
0.3 oz. Baking Powder (2 tsp.) 2.5 oz. Honey
0.2 oz. Cinnamon (1 tsp.) 2 oz. Brown Rice Syrup
.06 oz. salt (1/4 tsp.) 2 oz. Molasses
3 oz. Dried apricots, chopped 0.5 oz. pumpkin seeds or flaxseeds
Directions
- Preheat oven to 375°. Line the muffin cups. Place the flour, oats, wheat germ, baking powder, cinnamon and salt in a mixing bowl and mix well.
- In another bowl mix the apricots, raisins and bran flakes. Add the milk and stir.
- Add the eggs, honey, syrup, molasses and seeds to the fruit mixture. Stir this mixture into the flour until just combined, it will be lumpy. Put the batter into the muffin cups about 2/3 full.
- Bake for 20 -25 minutes.
- Serve warm or place on a cooling rack and let cool.
High Energy Smoothie
4 oz. Coconut Water 1 oz. Spinach, chopped
4 oz. Pineapple, chopped 3 oz. Frozen Blueberry
4 oz. Watermelon, chopped Banana or green apple
Put in a blender and blend at high. This should make enough for 2 - 3 smoothies. Good for all day!
