Finally the weekend has arrived! If
the weather cooperates, you will be outside all weekend with yard work and amusing
friends. Summer is fast approaching and your outdoor events will need something
cool and sweet. You can freeze mint leaves in your ice cube trays for that hint
of mint in your tea. If you don’t like mint but like lemon in your tea freeze
the lemon with the rind in your ice cube tray. It’s fun and since it is done in
advance you don’t have to spend time cutting lemons.
Why not make your favorite ice
cream and put it in between your favorite cookies? Ice cream sandwiches can be
made in advance too, make the ice cream and cookies the night before and next
morning grab your cookies and an ice cream scoop. It works really well if you
have frozen the cookies overnight. Let
the ice cream soften a little, put as many bottom cookies on the cookie sheet
as you need. Put a scoop of ice cream on each one and top it with another
cookie, smash it down then individually wrap each one (preferably three times
with plastic wrap, helps keep the cookie fresher) and put them back in the
freezer.
Don’t forget the watermelon and
other fresh fruits after all you can’t have a picnic without them. Start the
barbeque and let’s get this party started.
