Miroir needs a Glaze



First I need to apologize for not putting this up yesterday. If you have never made a simple syrup the first thing we should do is make this. It is the glue that will help keep our Miroir together. A simple syrup is simply sugar and water that has been heated to melt the sugar about equal parts of both. Now let’s make our topping and build a beautiful dessert. I am giving the recipe for raspberry miroir but you can use other fruits.

Miroir Glaze
1 lb.     Raspberry puree, strained
4 oz.    Sugar
½ oz.    Sheet gelatin

Heat the puree to 120°, add sugar, stir to dissolve, add softened gelatin. 

To assemble the Miroir:

  1. Place on a cake board, or on paper-lined sheet, line mold with acetate. (if you have 2 to 3 inch rings, line the ring and use the acetate to build the cake)
  2. Cut disks to fit inside ring (use cutters).
  3. Cut patterned sponge sheet to fit the mold.
  4. Place disk inside, use simple syrup to “glue”.
  5. Pour the mousse inside the mold just below the top of the acetate mold.
  6. Chill overnight
  7. When ready to finish, make the glaze
  8. Use an off-set spatula, cover top of cake with an even layer of glaze
  9. Unmold, garnish with fresh fruit or chocolate.  

I know this seems to be a long process and it can be, but it is delicious and a way to make your friends and family just say “Wow”! I hope you enjoy and as always Enjoy!
