So
today, my husband Karey asked for brownies. Then he stipulated I don’t want
them too sweet, “I want them to be more bittersweet, than sweet”. In the back
of my mind I am going, “What, have you lost your mind, the sugar makes it
moist!” Then I calmed down and said ok, I pulled out my recipe and looked at
it, the recipe called for a full cup of
sugar, now I refuse to use fake sugar so I took ¼ cup of the sugar out and made
the brownies. These are usually super moist brownies and you would think that
taking out a little sugar wouldn’t affect the product, you would be wrong. They
are still good and taste great but to me a little dry. My husband loves them,
he says they are perfect, but what does he know he puts his brownies in a bowl
full of milk!

so today we are going to discuss sugar. Sugar has a lot of different jobs in a
baker’s kitchen, it sweetens of course, but it makes things moist because the
sugar is hydroscopic so it actually holds the water and it helps the goodies
get a nice golden brown.
What

Is
it bad for your health, the answer is fairly simple – In all things the key is
moderation! One should never make sugar a staple of their diet, but sugar
breaks down in the body naturally whereas the alternatives do not. If you want
less processing in your sugar, try a turbinado sugar that is what Sugar in the Raw actually is. There are
palm sugars and I saw a coconut sugar in the store the other day.
