all, so today we have leftover brownies (doesn’t usually happen) and I have
brought in strawberries from my garden. My husband says “strawberry cheesecake
mousse”, I say “we have leftover brownies” and I get the sad face. You know the
one that looks like I just took his favorite tool and sold it.
So
here we are, cheesecake usually needs to be baked and mousse is usually never
baked but as always there are exceptions to rules. Here is this one, we take
the eggs out of the cheesecake and we make or buy whipped cream. The nice thing
about making whip cream is you can adjust the sugar to your own taste. You can
chop or puree the strawberries again you can add or not add sugar. Cream the
cream cheese and sugar add the strawberries and then fold in the whipped cream.
Pretty easy now let’s add the numbers.
